Churri Filet Mignon

- One pound filet mignon
- 50 grams grass fed butter
- 100 grams grass fed beef fat
- 3 garlic cloves
- 1 pound bay leaves
- 5 grams thyme
- 5 grams rosemary
- Salt and black pepper for seasoning
- Churri (as much as you’d like)

Step by step:
1. In a hot pan add the beef fat and then the beef tenderloin, make sure you sear it and create a nice crust in both sides
2. Reduce the temperature to medium and add butter and rest of ingredients
3. Bathe and lather the beef with a spoon
4. When cooked rare let it rest for 10 min before slicing it
5. Add churri and enjoy
